These two salad recipes are great any time of year. But they are especially perfect in the fall and winter. During these two seasons, many just want a salad but also want something warm. Warm Chicken Spinach Salad is the perfect solution. And Crunchy Apple Salad takes advantage of the abundance of apples in the fall and even winter. You can not go wrong with these salads! WARM CHICKEN Spinach Salad 1 / 2 pound skinless chicken breasts, cut into thin slices 3 tablespoons olive oil, divided 1 / 4 teaspoon cornstarch 1 / 4 teaspoon salt 1 / 8 teaspoon pepper 2 tablespoons juice freshly squeezed orange 2 tablespoons cider vinegar 3 cups torn spinach leaves 1 medium navel orange, peeled and sectioned 2 thin slices red onion, chopped 2 tablespoons toasted walnuts quadrants in a skillet, saute chicken in 1 teaspoon of oil for 5 minutes or until no longer pink. Make sure it is cooked. In a small bowl, combine cornmeal, salt, pepper, orange juice, vinegar and remaining oil until smooth. Stir the mixture into the pan. Bring to a boil and cook and stir 1 minute or until thickened. In a large bowl, combine the spinach, orange, onion and nuts. Add the chicken mixture with spinach mixture. Mix and serve. Yield: 2 servings of 298 calories, 16 g carbohydrates and 30 grams of protein each Note: This recipe is adapted from one I got in an old Taste of Home Light and Tasty magazine. CRUNCHY APPLE SALAD 1 cup unpeeled, diced Granny Smith apples 1 cup unpeeled, diced Golden Delicious apples 1 / 2 cup unpeeled, diced Red Delicious apples 1 cup drained mandarin orange slices 1 medium banana, sliced Guidelines apples and bananas with a little lemon juice to prevent discoloration. DRESSING 3 / 4 cup nonfat sour cream 2 tablespoons fresh orange juice 2 1 / 2 teaspoon Splenda 2 teaspoons unsweetened coconut, toasted Combine fruit in a container that is enough – This is very clear in a container well. In a small bowl, mix all dressing ingredients. Stir the fruit mixture and serve. Six pieces of 3 / 4 cup each.
