In a large nonstick skillet over medium-high heat, heat the olive oil. Add the onion and saute for about 10 minutes, stirring frequently. Add the peaches, tomatoes, and ginger and cook 2 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer 20 minutes. Place the mixture in a food processor or blender and process until smooth or leave in a sauce consistency to pour over a block of cream cheese.
Yield 3 cups
Keep the leftover sauce in refrigerator.

The grill or roast a rump steak, or meat of your choice, cut into thin slices and cover with the corn and tomato sauce.

2 tablespoons sherry vinegar

Coat a large nonstick skillet with cooking oil spray and heat over medium-high heat. Add corn to skillet and saute 5 minutes until lightly browned. Remove from heat, stir in the tomatoes and remaining ingredients except parsley. Pour over steak or meat. Garnish with parsley if desired.
