Here is a recipe for a delicious chef salad to which you can synchronize it with your favorite low-fat, sugar-free dressing. Then add a bowl or a cup of garden chicken soup with crackers. This is an ideal meal for any time of year and it works well, either for lunch or dinner. Chef Salad 8 cups chopped iceberg lettuce 1 cup radishes, thinly sliced 2 green onions including tops, sliced 2 oz chopped cooked ham 2 oz cooked white turkey meat, chopped 2 slices of American cheese, shredded 2 slices of cheese Swiss, diced 1 large tomato, chopped 1 hard boiled egg, chopped 1 / 3 cup of your favorite low fat dressing without sugar in a large bowl, combine the lettuce, radishes and green onions. Cover bowl and refrigerate until well chilled or use ingredients that have been in the refrigerator. Pour dressing over mixture and stir to coat. Top with remaining ingredients. Here’s a full menu for you that are diabetic friendly. The food is delicious, no need to prepare foods for diabetics and nondiabetics. In fact, no one will guess what your meal plans around the needs for diabetes. Let’s start with an appetizer that people can “graze” while doing it right from the grill. How about a little garlic olive Cheese Dip with a variety of wheat or other whole grain crackers and some baked tortilla chips? Sound good? Here’s the recipe: GARLIC OLIVE CHEESE DIP 1 package (8 ounces) cream cheese, softened 20 pimiento-stuffed olives, Spanish, finely chopped 5 cloves of peeled garlic to a pressure of garlic Mix the three ingredients together. Let stand for at least an hour to allow flavors to blend before serving. Serve with party crackers or chips. Refrigerate leftovers, if any! Chicken is an excellent choice for grilling. Heat in microwave for 2 minutes on high. Carefully remove from microwave and stir the mixture to see if Splenda is completely dissolved. If not, return to microwave and heat an additional 45-60 seconds. Fill a jug beautiful, great with ice. Pour lemon juice over ice. Add the Splenda and stir mixture well. Add 4 cups (1-quart) of cold water. Stir well to mix. Taste and add more water to suit your taste. BLACKBERRY LEMONADE TWIST 2 cups fresh blackberries or frozen unsweetened blackberries, thawed 1 cup fresh lemon juice 1 cup granulated Splenda 4 cups cold water Put the berries, lemon juice, and Splenda in the blender. Process mixture until smooth, scraping down the sides. Press mixture through a sieve into a pitcher. Discard the solids left in the sieve. Add water. Serve over ice.
