This menu provides a quick and easy recipe for chicken cacciatore, spinach salad and warm sugar white cake with several coverage options, to finish the meal. Fast, easy and healthy. Try this meal. You’ll be glad you did.
EASY Chicken Cacciatore
2 tablespoons olive oil
2 pounds skinless chicken thighs and / or
1 cup thinly sliced onion
Thin strips 1 cup green pepper strips
1 / 2 cup chopped celery
2 tablespoons tomato basil garlic mixture (for example, Mrs. Dash)
1 – can 14 1 / 2 ounces diced tomatoes, undrained
1 / 2 cup red wine for cooking
Cooked whole wheat spaghetti-thin 4-6 servings.
Heat oil in large skillet. Add chicken and cook over medium heat on both sides until lightly browned. This should take about 5 minutes per side. Remove from pan and reserve. Add onion, bell pepper, celery and spices to the pan. Cook over medium heat 3-4 minutes until vegetables are tender, stirring occasionally. Stir in tomatoes and red wine. Return chicken to skillet with the vegetables and cook over medium heat 6-8 minutes or until chicken is no longer pink in the center. Serve over cooked spaghetti.
HOT Spinach Salad
1 bag (approx. 7 oz) baby spinach leaves
1 / 2 cup salad croutons (preferred non-fat)
1 / 4 cup white vinegar
1 / 4 cup water
1 / 4 cup Dijon mustard
3 tablespoons Splenda Granular
5 slices of bacon
1 / 4 cup chopped red onion
2 cloves garlic, peeled and chopped
Wash spinach leaves well, remove stems and drain in a colander. Place in a salad in a bowl and add croutons. In a small bowl, mix together water, vinegar, mustard and SPLENDA. Set aside.
A medium-high heat, the bacon in a frying pan until crisp. Drain well on absorbent paper. In the same pan, put the onion and garlic and cook 1-2 minutes. Add the vinegar mixture, bacon in the pan and simmer another 1-2 minutes. Pour over spinach and croutons and mix well. Serve immediately while still warm.
This is a good salad diabetic and carbohydrates and proteins are basically the same and a cup of 1 3 / 4 portion has only one gram of sugar.
RAPID WHITE CAKE
1 2 / 3 cups sifted cake flour
2 teaspoons baking powder
1 / 8 teaspoon salt
1 cup Equal Sugar-Lite
1 / 2 cup solid vegetable shortening
2 egg whites
3 / 4 cup 2% milk
1 teaspoon vanilla
Preheat oven to 350 degrees
In a medium bowl, combine the flour, baking powder, salt and equality. Mix well. Add shortening and egg whites. Using an electric mixer at low speed and add to flour mixture. Add milk and vanilla and beat on medium speed for 3 minutes or until soft. Spray a baking dish 9 x 13-inch nonstick cooking spray. Pour batter into pan and bake at 350 degrees for 30-35 minutes until toothpick inserted in center comes out clean.
Topping suggestions:
Cut into squares and top each square with a dollop of unsweetened whipped cream and fresh fruit of your choice.
Mix a small packet of your favorite mix of flavored gelatin according to the conditions of the package. As cake begins to cool, poke holes in cake with large fork. Pour half of gelatin mixture over cake. Refrigerate. Refrigerate remaining gelatin until they are established. Using a blender, mix gelatin in a small container of whipped cream without sugar. Spread over cake. Keep in refrigerator until ready to serve.

I love these recipes. I chicken breast. I also like it with angel hair pasta. It is absolutely delicious and very easy to do. I like to sprinkle crushed pepper on top. My family loves this, even oh-so-picky my 5 year old! I use cream of chicken with herbs soup, we like the extra kick.
The ingredients of the chicken spaghetti recipe # 1:
1 chicken
1 cup chopped onion
2-3 stalks celery, chopped
1 cup bell peppers, chopped
½ cup butter
1 (10 1 / 2 oz) cream of chicken soup
1 (10 1 / 2 ounces) mushroom soup
1 (16 ounce) can tomato sauce
16 oz spaghetti
2 cups Velveeta cheese or parmesan cheese, for topping
Methods chicken spaghetti recipe # 1: Boil chicken with onion, celery, butter, salt and pepper until chicken is done. Take chicken out of broth and remove the bone, while the spaghetti is cooked in the broth until done. Place chicken discredited again with spaghetti and broth. Add the cans of cream of chicken and cream of mushroom. Add the tomato sauce. Add Velveeta cheese to taste. Serve warm
Notes:
You do not have use celery if you do not like. No problem!

1 / 4 cup soy sauce
2 tablespoons water
2 tablespoons brown sugar
1 tablespoon sesame oil
1 tablespoon balsamic vinegar
1 tablespoon cornstarch
1 clove garlic – minced
1 teaspoon minced fresh ginger
1 / 4 teaspoon black pepper
1 / 4 teaspoon cayenne pepper
4 skinless, boneless chicken breast without stockings
1 green pepper cut into strips
1 cup shredded red cabbage
2 stalks celery, sliced – optional
1 / 4 cup sliced green onions
1 package of noodles or angel hair pasta – 8oz
Directions chicken spaghetti recipe # 2: Mix soy sauce, water, brown sugar, sesame oil, vinegar, cornstarch, garlic, ginger and both peppers. Place on a plate. Cut chicken into 1/2-inch strips and add the marinade. Cover and refrigerate for 30 minutes. Towards the end of marinating time, bring salted water to boil for cooking pasta. Remove dish from refrigerator. Fry until chicken is tender and sauce thickens. Add the peppers, cabbage, celery and green onion. Cook until vegetables are crisp. Add pasta to boiling water and follow package directions. Drain. Place chicken mixture on top.

This is the dinner that I made on Tuesday, March 3, 2009. This is one of the first Italian recipes that I learned to cook here in Italy. It is called: SPAGHETTI all’AMATTRICIANA!
