Southern Style BBQ Chicken

Servings: 4-6This recipe can be made with any cut of meat, chicken, breasts, thighs or chicken pieces threaded on skewers. This sauce can double as both a marinade and a sauce simply mix the ingredients together for the marinade then separate and use one-third and two thirds marinade for sauce breasts cocida.Ingredientes4-6 4-6 Chicken 4-6 chicken drumsticks chicken breasts cut into chunks and threaded on kebab skewers (barbecue sauce) 1 onion (finely chopped) 1 clove garlic, crushed 2 tablespoons oil 2 dsp cider vinegar 1 teaspoon grainy mustard ¼ teaspoon paprika pepper 2 tablespoons soft brown sugar few drops of Worcestershire sauce Pinch of salt and pepper 1 large tomato tin (400g/14oz) chopped 1 tomato puree 200 g dsp / 8 oz vegetables (peppers, mushrooms, green onion) MethodTrim off any visible skin or fat at this stage, then brush with a little olive oil. Brush chicken pieces with marinade. Begin by placing on the grill and cook until tender. Turn occasionally with extra marinade and brush. Make sure the chicken is no longer pink before serving. This can be served with barbecue sauce Deep South. Barbecue sauceToss crushed garlic and onion in hot oil for 1-2 minutes. Add the cider vinegar, grainy mustard, pepper, brown sugar, Worcestershire sauce and seasoned cook for 1-2 minutes until sauce is almost caramelized. Add the can of tomatoes and tomato puree DSP. Continue cooking for another 3-4 minutes. After cooking the sauce can be cooled and stored in a screw top jar in the refrigerator for up to 1 week. At this stage take one third of the mixture and use as a marinade. Take the remaining sauce and add the finely chopped 1 yellow pepper 4 oz mushrooms chopped and 4-6 finely chopped chives. Return to heat and cook for 5 minutes. This will give you a wonderful barbecue sauce thick.
