How to cook chicken legs grilled

Posted by admin on Friday Jul 23, 2010 Under Chicken Recipes

grilled chicken legs are not only a delicious summer meal, but also economic and legs are one of the cheapest parts of the chicken. Just because they are cheap does not mean having a poor taste. In fact, the dark meat of chicken has more flavor because it contains more fat. One of the biggest problems facing the grill enthusiasts however, with cooking times and temperatures. One of the most asked questions is: how long grilled chicken legs? I really can not give an exact answer to this question as it really depends on the type of grill you use, the method of grilling and how big the chicken legs are. It really is an excellent idea to invest in a good cooking quality thermometer. I have an electronic thermometer alarm. It really is a great little cooking gadget and I’d be lost without it. It is very accurate and eliminates all the guesswork, riddles and is not an option when cooking meat, especially chicken. METHODS Boil broiler chicken legs FirstThe goal with this method is to cook the meat throughout before it goes on the grill. This greatly reduces the risk of food borne diseases and also reduces cooking time significantly. The disadvantage of this method is a serious lack of flavor. Because you are cooking meat grilled over a much shorter period of time, the meat will not have the opportunity to pick up the flavor on the grill. Then marinate marinated grilled chicken legs first is always a good idea. Not only give your food taste great, but it also keeps moisture from the meat during cooking. For best results, marinate the chicken overnight. Below is an excellent marinade that I use often and is very versatile. Works well with seafood such as shrimp and scallops too. Citrus marinade ingredients of herbs: 4 Chicken Legs1 / 4 cup Extra Virgin Olive Oil2 1 / 2 tablespoons fresh lemon Juice1 1 / 2 tablespoons natural orange Juice1 / 3 cup chopped fresh Parsley1 / 3 cup chopped fresh coffee Garlic cloves Cilantro2 Minced1 Salt1 teaspoon / 4 teaspoon freshly cracked Black PepperDirections: In a large bowl, mix all ingredients except chicken legs. Add the chicken in the bowl with the marinade and toss to coat. Refrigerate for several hours, overnight if possible. Lets Get ASAR, I found that the best way to cook chicken thighs on the grill is to sear the meat first and then finish the cooking process to indirect fire. The result is a nice moist chicken leg with a deliciously crispy skin. Step 1: Remove chicken from marinade and rinse. This is done to remove any marinade ingredients that stick to the chicken. If left on, it can burn. Coat the chicken with a little oil to prevent sticking to the grill. Step 2: Clean the grill. The best method for cleaning the grill is to turn the grill on high heat and allow to burn fat and dirt. Use the brush to scrape clean the grill grates. For charcoal grills, only light the charcoal and allow the fire to heat the grates and scrape the grates clean. Step 3: Heat the grill. We will set the grid for hot / indirect cooking method. For gas grills, this is pretty easy. Everything I do is turn on a burner on high and leave the others out. For charcoal grills, is a bit trickier, but not rocket science. Everything that once the charcoal is ready, is to push all your charcoal to one side leaving half of the grill without charcoal. The side with charcoal is for searing and the other is for indirect cooking. Step 4: Begin cooking. Once the grill is hot, go ahead and put the chicken legs on the hot grill and sear on all sides. Just sear the legs for a few minutes per side. Looking for a nice sear and prevent burning the skin. After having brown, go ahead and move over to the cool side of grill and cover. Simmer for a good 20 minutes and then leave your basting sauce. If you used the citrus herb marinade from above, try to find a basting gravy that complements the citrus flavors. Baste the legs on all sides and then cover. After another 20 minutes or so, to use your thermometer, go ahead and check to see if the legs are made. Are you looking for an internal temperature of 165 degrees Fahrenheit. Once the legs are made, if not as crisp as you want, put them on the hot side of grill again for a few minutes before removing from grill. Enjoy!
