As a busy mother and grandmother, I am always looking for ways to prepare delicious meals for my family. . . for those busy nights when I have to spend hours in the kitchen. To resolve this problem, I like to pan and freeze for future meals. When I do these three recipes, I make all in one day. You can freeze in baking dishes, however, I like to go to the dollar store and buy disposable aluminum baking pans. Usually you can get 3 for $ 1. 00. I left completely cold, then wrap well to freezing. They will keep in the freezer for up to six months. Cheesy Chicken Casserole 1 pounds Velveeta cheese, cubed 1 cup milk 1 / 2 cup salad dressing 2 cups cooked chicken, cubed2 cups peas, cooked and drained 8 oz noodles, cooked and drained 1 tablespoon chives Heat chopped Velveeta cheese, milk and seasonings to a simmer. Stir until cheese sauce is smooth and creamy. Add remaining ingredients. Mix well. Pour into pan and bake at 350 degrees for 35-40 minutes. Chicken & Rice Casserole 2 cans cream of chicken soup 1 small box instant white rice 6 skinless chicken breasts 1 package onion soup mix 1 / 4 dry bread crumbsPut a can of soup at the bottom of the pan Cover with rice. Place the chicken breasts over rice, sprinkle with onion soup mix, cover with second can of soup. Cover and bake at 350 degrees for 1 hour and 30 minutes. Remove from oven and sprinkle bread crumbs on top. Put back in oven for 15 minutes. Oriental Chicken Casserole2 3 / 4 cups cooked chicken, small can of mushrooms cubed1 or 1 cup fresh mushrooms3 tablespoons soy sauce1 / 2 cup cream of celery mushrooms can cashews1 soup1 / 2 cup diced1 teaspoon onion, finely diced1 3 / 4 noodlesPlace cups chow mein noodles 1 cup chow mein at the bottom of your baking dish. In a large bowl combine all ingredients, except remaining cup 3 / 4 chow mein noodles. Mix until blended. Sprinkle remaining chow mein noodles on top. Bake in a preheated oven at 350 degrees for 35-45 minutes or until done.
