I have never liked christmas cake or wedding fruit cakes UNTIL I discovered this recipe. It uses dark cane sugar but ISN’T rich or drenched in alcohol. Everyone who has tried this cake loves it!! You can make it up to days before Christmas because it tastes great from the bake it is baked (no need to sit and improve flavour).
