During the summer, my family loves to travel and go camping. Our trailer has a stove top, refrigerator and microwave, so look for recipes that do not require the use of an oven to make dinner for our family when we were camping out on the road. The following two recipes can be fully realized through the use of microwave and require less than 1 hour from start to finish. Can also be made until the day before you go and take it with you to reheat in the microwave if desired. Chicken with mushrooms Sauce3 tablespoons butter (not margarine) 1 cup fresh mushrooms, tablespoons finely sliced2 chopped1 / 3 cup milk 1 brick of cream cheese, cut into cubes1 / 2 teaspoon chicken bouillon base1 / 2 teaspoon salt1 table / 4 teaspoon black pepper4 boneless, skinless chicken breastsIn a glass baking dish, combine 2 tablespoons butter, sliced mushrooms and onions. Cook 3 1 / 2 minutes, stirring after half the cooking time. When finished, add the milk, cream cheese cubes, chicken soup base, salt and black pepper. Microwave on high for 3 minutes, stirring halfway through cooking time. Remove from microwave and set aside. In another glass baking dish, place chicken breasts and 1 tablespoon butter. Microwave breast for 8-10 minutes or until no longer pink in the center. Remove dish from microwave and pour the mushroom sauce on top. Stir to blend ingredients and replace it in the microwave. Cook on high for an additional 3-4 minutes. Chicken and pasta Dinner4 oz uncooked spaghetti cups noodles3 water1 / 2 teaspoon of table spoons salt2 butter1 / 3 cup finely chopped4-6 boneless skinless chicken can of tomato breasts8 sauce1 / 2 teaspoon basil1 / 2 teaspoon of oregano1 / 2 teaspoon black pepper1 / 4 cup heavy whipping cream1 tablespoon parsley1 / 2 cup mozzarella cheese, finely shredded1 / 4 cup olives, slicedIn a large glass bowl, combine the uncooked noodles, water and salt. Pasta Microwave on high for 10-12 minutes or until fork tender. You will have to remove the dough 2-3 times during the cooking process so they will not sticky. Drain and reserve. In a glass baking dish, combine butter and onion. Microwave on high for 3 minutes and then add the chicken breasts and cook on high for 10-12 minutes or until the meat is not pink. In another bowl, combine tomato sauce, basil, oregano, salt, pepper and cream. (I like to use a silicone spatula.) Pour tomato sauce over the cooked chicken breasts and cook on high for 4-5 minutes. Remove baking dish and sprinkle with parsley, mozzarella cheese and sliced olives on top. Replace in microwave and cook on high for another 3-4 minutes or until cheese is melted. Serve over cooked pasta noodles.

We all know we need quick recipes to get dinner on the table quick dinner. Very rarely one of us has time to do everything from scratch and spending hours in the kitchen. Here are some of my favorite quick dinner recipes to get dinner on the table in a jiffy!
Salisbury Steak
This recipe does not have much time to prepare, but takes a little time to cook, so plan ahead for that. The sauce has a nice zip to it, thanks to the barbecue sauce and stuffing mix adds a nice flavor to burgers and helping to make dinner quick fix. To make this recipe even faster, substitute dried onion flakes onion.
Ingredients:
1 pound ground beef 逊
1 package chicken stuffing mix
逊 1 cup water, divided
他 c onion, chopped (or 1 tablespoon dried onion flakes)
8 oz sliced fresh mushrooms
C 逊 barbecue sauce
Getting There:
Preheat oven to 375 degrees.
In a large bowl, mix the ground meat together then stuffing mix, 1 cup water and onion 村. Pat 逊 inch-thick oval patties. Place in a baking dish and bake for 25 minutes.
While the patties are baking, spray a skillet with cooking spray and heat over medium-high heat.辿 Saut mushrooms for 5 minutes, stirring occasionally. Add the remaining water and barbecue sauce. Lower the heat to low and cook for 1-2 minutes or until sauce is heated.
Serve the sauce over the burgers.
To complete this meal, serve with green beans and baked potatoes in the microwave while hamburgers are in the oven.
Zippy Chicken & Pasta
This is a fun and colorful quick dinner recipe that kids and adults love. It is a great way to get children to enjoy eating your vegetables. This is a complete meal in itself which is especially fast. Since it is fairly light, dessert would be a good addition to this meal.
Ingredients:
1 (8 ounce) package fusilli or rotini pasta
C 逊 Italian dressing, divided
1 pound skinless chicken breasts, cut into pieces
2 cups broccoli
1 red pepper, chopped
1 small onion, thinly sliced
1 tablespoon chopped fresh parsley (or 1 teaspoon)
村 cup grated Parmesan cheese
Getting There:
Follow package directions for cooking pasta.
While pasta is cooking, in a large skillet, heat 村 cup of the sauce over medium-high heat. Add chicken pieces and cook about 5 minutes or until chicken is cooked through. Stir occasionally. Add vegetables and parsley to skillet and cook for 5 minutes.
Drain the pasta. Add to chicken mixture and mix well. Add remaining cup of Italian dressing and stir to coat 村. Sprinkle with Parmesan cheese.
A fun twist on the dinner would be to substitute chicken for shrimp. If you make this substitution, reduce the cooking time of about 2 minutes or until shrimp turns pink. Shrimp in turn, if left unchecked rubber, so it is important to observe the cooking time.
From this quick recipe dinner is a meal in a bowl, in reality there is nothing to add to complete this meal. But it’s nice and light, a quick dessert would be great. I would suggest a pudding parfait. Simply take your favorite flavor of pudding, layer it with cool whip and some cracker crumbs in a cup and not looking for an easy but elegant dessert.
