The soups are perfect with or without meat and are versatile enough to serve as an appetizer, snack or light meal with a sandwich or salad. On a busy weekday, the soup makes a good dinner choice. Serve with corn bread or a rustic crusty bread, a relish tray or a tray of meats and cheeses. You can add a simple dessert for a complete meal. For those who like meat soup, try this recipe for chicken soup with wild rice and spinach. For plant lovers, try this recipe for Spring Vegetable Cream Soup Rice. CHICKEN SOUP WITH WILD RICE and spinach 1 can (14 ounces) reduced-sodium chicken broth 1 3 / 4 cups diced carrots 2 cups wild rice cooked 2 cans (10 3/4-oz each cream), condensed chicken soup 1 teaspoon thyme 1 / 4 teaspoon dried sage Freshly ground black pepper, diced or strips 2 cups baby spinach, chopped 1 / 2 cup milk in a medium saucepan, bring chicken broth to a boil and add carrots and cook about 10-12 minutes. Add the cooked rice with the carrots. Stir in soup, thyme, sage and pepper, return to boil. Add chicken, spinach and milk. Ice Cream Sandwich Cake

Sue Mallick with Food City presents a wonderful recipe for an ice cream sandwich cake at Food City’s Cooking School. This episode accents a free program featured every Monday night at The Crown Point Shopping Center location on North Eastman Road in Kingsport, TN. See www.foodcity.com for complete recipe details. Ingredients: 1/2 cup hot fudge ice cream topping; 2 containers whipped topping; 1 pkg chocolate pudding mix; 8 chocolate sandwich cookies, chopped; 12 ice cream sandwiches In a medium bowl, whisk together ice cream topping and 1 container of whipped topping until well blended. Add dry pudding mix and stir until well blended. Gently fold in chopped cookies. On a cookie sheet that has been covered with foil, arrange 4 ice cream sandwiches side by side; top with half of the whipped topping mix. Repeat layers ending with ice ream sandwiches. Frost the sides and top with second container of whipped topping. Freeze 4 hours before serving.
