I have been making this cake for a looong time – way back before fat & calories were in the news quite so much (so it’s not the healthiest!) However, it is a delectable cake so a once in a while indulgence can’t be denied…enjoy! And don’t forget to check out my video on Cream Cheese Frosting – the perfect way to top this moist and spicy cake! Carrot Cake 4 eggs 1 cup honey 1/2 cup lightly packed brown sugar 1 cup oil 2-1/4 cups flour 2 tsp baking powder 1 tsp cinnamon 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp nutmeg 3 cups grated raw carrots 1 cup raisins 1 cup chopped walnuts – optional 9″x13″ greased cake pan, 325 degrees Fahrenheit

Surprise Carrot Cake Video Recipe

This is one of my most requested cakes. People always ask me, “What is the ’surprise’?” I just laugh and say “It doesn’t have any carrots.” That’s not the case of course; it’s full of carrots. The surprise is the filling. Instead of topping my finished cake with the traditional cream cheese icing, I bake a cream cheese filling in the cake. It’s absolutely awesome! You can eat your finished cake plain, frost it with butter cream or just dust each slice with icing sugar. It’s your choice.
