Cinco De Mayo, celebrated on May 5th, is a day full of food and drink. What better way to participate than to make a traditional Mexican dish and pair it with a beer. I decided to make a Mole (sauce) and combine it with some chicken. There are many types of Mole, and they can take a long time to prepare, but I chose to make a simplified version of the most common Mole, Mole Poblano, which is often made with Peanut Butter and Chocolate.
