As a busy mom and wife, I’m always looking for easy chicken recipes and time saving, and it fits all ‘mama’ requirements. What I like about this recipe is the fact that it does all day ingredients most likely to have on hand. To save time, I do step 1 the day before and then refrigerate in a container. The next day, I’ll step 1 ingredients reheating in the microwave for 1-2 minutes and then proceed to step 2. I do this so that I’m not spending an hour in my kitchen, heavy work or night school. RecipeStep chicken mozzarella 1 Ingredients: 2 1 / 2 lbs. of boneless, skinless, chicken eggs breasts2 and beaten1 / 2 cup seasoned dry bread crumbs1 / 4 cup butter or margarine1 can (8 ounces) tomato sauce or spaghetti sauce3 / 4 teaspoon dried basil chicken leavesCut the half and remove the skin. In a small bowl, beat eggs. Dip meat in egg and then plunge into the dry breadcrumbs. Melt the butter in a large 12 “round pan until melted. Place the chicken breasts from the pan over medium heat and simmer until it has browned on all sides. Add the tomatoes and basil sauce, reduce heat. Cover and cook simmer until done, about 30-40 minutes. Step 2 Ingredients: 1 / 2 cup Mozzarella cheese, shredded1 / 4 teaspoon paprikaIn a small bowl, combine the mozzarella cheese with paprika until blended. Parts Place chicken in a greased 9-UN “square baking dish along with the rest of the ingredients in step 1. Sprinkle cheese mixture on top. Preheat oven to 375 degrees and bake in the oven for 15 to 20 minutes or until cheese is melted and bubbly around the edges.
