This was very informative! I knew the benefits of burning, but never did for chicken. All other types of meat, yes, but the poor chicken was out. Not today! After browned, taking my time to get all sides (which helps with the presentation) I put in a round clay pot ( Pampered Chef). Deglaze the pan then iron with 1 / 2 cup sherry, reduced to about 1 / 2 the shed on top of chicken before cooking. Let me say WOWSERS! Keep up the good work.

The chicken will continue cooking while resting. Remove from the oven at around 145-150 degrees F, but will reach about 160 F after resting. If you do not have a thermometer, which is done when juices run clear.
